Fresh Pasta: Fettuccine


ong-shaped fresh egg pasta, like dry pasta made of semolina, comes in many different widths, and sometimes even different colors: tagliatelle, pappardelle, paglia e fieno, taglierini, tagliolini, and of course fettuccine.

Fettuccine is a type of flat noodle with just the right width to enhance the taste of a wide range of sauces, from the richest culinary classics to the most delicate ones. The width of a fettucine strip is about 7 mm (0.28 inches), which is only a little wider than tagliatelle.

Traditionally, fettuccine is served with Bolognese meat sauce, but it can also successfully paired with lighter sauces, made with vegetables, cream, ham or fish.
