Stuffed Pasta: Tortelli


ccording to the historical account of a famous chef from Mantua, tortelli were invented 800 yeas ago by a Lombard woman by the name of Libissa. Legend or not, when the word tortei appears for the first time in the written record, in 1500, in the culinary accounts of the court of Mantua, it is used to describe "pasta flowers filled with all sorts of heavenly delights."

It is not difficult to imagine that a large variety of produce were used as stuffing for tortelli. Housewives would put to good use whatever was available to them, inventing new dishes with poor ingredients that nevertheless satisfied the senses. Thus they perfected tortelli filled with pumpkin as a Christmas Eve treat, and less costly variations with vegetables, eggs, bread, Grana Padano cheese and nutmeg.
