he making of Bra began in the valleys and mountains around Cuneo towards the end of the fourteenth century. After ripening, the cheese would be brought to markets in Piedmont and especially Liguria, where it was adopted as an ingredient in the preparation of pesto. Bra is a pressed, semi-fat semi-hard cheese made from cow's milk with, occasionally, a small dose of sheep's and/or goat's milk added. The period of ageing can vary. These cheese comes in three
varieties: "soft," "hard" and "d'Alpeggio" (alpine). Bra is cylindrical in shape and is produced throughout the provinces of Cuneo and Turin.
