Casciotta d'Urbino (DOP)

Denominazione d'Origine Protetta

asciotta d'Urbino was already being made in the days of the Dukes of Montefeltro and the Della Rovere family who took a personal interest in the manufacturing process. Cheese-making was at the centre of a flourishing trade that Urbino enjoyed with the States of the Church and Rome where the cheese was much relished by certain illustrious figures such as Pope Clement XIV and Michelangelo Buonarroti. Casciotta d'Urbino is a crumbly, semi-cooked cheese made from 70-80 per cent whole sheep's milk and 20-30 per cent whole cow's milk. The rind of the cheese is thin and yellow, and the paste is yellowish white. Casciotta d'Urbino has a sweet flavour. The area of production encompasses all the lands in the provinces of Pesaro and Urbino.
