Murazzano (DOP)

he origins of Murazzano are to be found among the cheeses of Asti that Pliny the Elder praised in his Natural History. Murazzano is a cylindrical, unripened, full-fat cheese made from sheep's milk or else from a mixture of sheep's milk, and no more than 40 per cent cow's milk. Murazzano is a sheep's milk variant of Toma. It is a milky white rindless cheese with a soft and slightly springy texture. It has a mellow, delicately aromatic and highly agreeable flavour. The area of production encompasses many towns within the province of Cuneo and the hilly district of Alta Langa.
