Cappero di Pantelleria (IGP)

he caper has been known since Classical Greek and Roman times when it was called by its Greek name, kapparis. The Cappero di Pantelleria is globular in shape, and mustard-green in colour. Its pronounced aroma is quite untainted by extraneous elements. The whole range of caper varieties now in use all belong to the inermis species. Pantelleria is an island formed of volcanic rock. Owing to its very low rainfall, Pantelleria is extremely arid which makes it an ideal habitat for the caper. The island has devoted a large part of its territory to the cultivation of the caper plant. It has developed husbandry techniques, built efficient processing plants and created an effective marketing structure. The caper berry is therefore a very important source of income for the islanders. The production area includes the whole island of Pantelleria which is in the province of Trapani.
