he Green Asparagus of Ateldo is grown in a distinct area within the confines of Via Emilia (an ancient road in the province of Bologna), the Adriatic coast, and the River Po in the province of Ferrara. This is a warm plain with sandy soil, ideal for the cultivation of asparagus. The plant was brought here in 1923 by a group of Ateldo farmers who had learned the methods for growing asparagus in Nantes, France. After some experimentation, lasting several years, the cultivation of asparagus at Ateldo finally took off in the 1950's.The Green Asparagus of Ateldo has a distinctive intense green color, firm but crispy flesh, and a firm, solid tip that will break but won't bend. The best way to cook this variety is to simply boil or steam it so that its delicate scent and taste remain intact.
