Clean, bone and sauté the thrushes with half the amount of butter and 2 bay leaves for 35 mins. Crush them in a mortar and pass through a sieve. Add béchamel, egg yolks and whipped egg whites. Pour into a buttered 12-in. mold and cook in bain-marie in the oven for about 35 mins. at 400ºF.
Note:
Any sformato, once unmolded, may be presented on a serving platter or may be used as an accompaniment to meat or fish preparations. |
