Bianchetti are tiny fish, the spawn of sardines or anchovies. They can be fished only during certain and limited times of the year so as not to endanger the fish population. The fish must be absolutely fresh for this dish.
1 lb. whitebait (dressed)
lemon juice
salt and pepper
olive oil
Wash the whitebait well in cold salt water (in Italy, where possible, it is washed in seawater), drain and season with salt, pepper, lemon juice and some olive oil. Let stand refrigerated for one hour and serve.
