4 servings

INGREDIENTS

4 slices of Tuscan bruschetta bread
4 slices of Prosciutto Toscano PDO
4 eggs
a handful of Grana Padano PDO shavings
a few sprigs of rosemary
salt and pepper
1 tablespoon of white vinegar

Turn on the oven at 350° F, spread the four slices of Prosciutto Toscano PDO (Tuscan PDO ham) and the slices of bread to toast on a baking sheet. Leave in the oven until the ham has become crispy. Separately, in a saucepan with a thick bottom, boil water, add a pinch of salt and a tablespoon of white wine vinegar. Create a vortex in the water by turning constantly with a spoon. Gently pour the egg into the center of the vortex and wait a minute or so until the egg has cooked. Proceed in this way for the rest of the eggs. Meanwhile, finely chop the rosemary together with salt and pepper.
Assemble the dish in layers, starting with the slice of crusty crunchy bread, the Tuscan ham, the egg, the Grana Padano PDO shavings and finally the mix of rosemary, salt and pepper.
