Aceto Balsamico Tradizionale di Modena PDO is a precious, aged vinegar produced in the Emilia Romagna Region. It’s obtained from the variety of grapes typically cultivated in the province of Modena, using special quality techniques.
Production Area: This vinegar is produced in the entire territory of the Province of Modena, in the Emilia Romagna Region.
Appearance and Taste: It’s characterized by a deep and lustrous dark brown color. It has a fragrant, penetrating and persistent aroma and a pleasant acidity. The flavor is well-balanced between sweet and sour.
Origins: The production area of Aceto Balsamico Tradizionale di Modena PDO, has always been very famous for the production of special vinegars. Historical testimonies of the production of a vinegar made with grape must are dated back to the first century B.C. (Virgilius, a Roman writer). Several other traces were found in the Middle Age. First reference to a regulated technique of production of this Vinegar is dated back to 1839.
Production: Aceto Balsamico Tradizionale di Modena PDO is obtained from various local grapes varieties, namely Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino and Occhio di Gatta. After grapes’ pressing, and before fermentation begins, grape must is cooked outdoors, over a direct flame at a temperature of around 80°C/176°F. The product is then left to age: it is put into a series of small barrels, each made from a different kind of wood, which are placed in decreasing order of volume. Barrels are kept in attics, subject to strong thermal seasonal excursions, which cause evaporation and subsequent concentration of the product. Each year, using a particular method, a part of the contents of the larger barrels are transferred into the smaller ones. It’s aged for at least 12 years and at least 25 years for the Extra Aged type. It can be packed and sold only in a bottle of unique, distinguishing shape.
Gastronomy: This vinegar is perfect to season each kind of dish. It’s great when served with flakes of Parmigiano Reggiano PDO or with vegetables. Aceto Balsamico Tradizionale di Modena PDO has to be stored in a well-sealed glass recipient at room temperature.
