“FRICO” WITH POTATOES AND MONTASIO PDO CHEESE

This recipe, with Mature Montasio PDO Cheese, is typical of the Region of Friuli-Venezia Giulia.

INGREDIENTS

  • 9 oz Montasio PDO cheese aged from 3 to 9 months
  • 3 large potatoes
  • Half an onion
  • 3 oz lightly smoked pancetta (bacon)
  • Salt and pepper to taste

DIRECTIONS:

Cut the pancetta into small cubes and brown them in a frying pan together with the finely sliced onion. Peel and chop the potatoes and add them to the pan with a pinch of salt and a little freshly ground black pepper. When the potatoes have softened, stir in the thickly chopped or grated Montasio PDO cheese. fry the “frico” on both sides until a golden crust has formed.
