Type Vin Santo Secco or Amabile: Trebbiano toscano and/or Malvasia del Chianti, 75%; other local white varieties, up to 25%. Type Vin Santo Occhio di Pernice: Sangiovese, 50%; other local red or white varieties, up to 50%.
