Vine variety requirements for this appellation's area change according to type and geographical subdenomination.
Type Bianco: Trebbiano toscano, 50%; Malvasia del Chianti and/or Pinot bianco o grigio and/or Chardonnay and/or Sauvignon and/or Vernaccia di San Gimignano, up to 50%; other local white varieties, up to 25%.
Types Rosso and Rosato: Sangiovese, 50%; Cabernet franc and/or Cabernet sauvignon and/or Merlot and/or Pinot nero and/or Canaiolo nero, up to 50%; other local varieties, up to 25%.
Type Novello: Sangiovese, 50%; Canaiolo nero and/or Merlot and/or Gamay and/or Ciliegiolo, up to 50%; other local red varieties, up to 25%.
Type Vin Santo Secco or Amabile: Trebbiano toscano and/or Malvasia del Chianti, 70%; other local varieties, up to 30%.
Type Vin Santo Occhio di Pernice: Sangiovese, 50%; oter local red or white varieties, up to 50%.
