Varieties:
Vine variety requirements for this appellation's area change according to type.
Type Rosso: Sangiovese, 45-70%; Cannaiolo and/or Ciliegiolo, 30%; Merlot, up to 15%; other local red varieties, up to 15%.
Type Bianco: Trebbiano toscano, 45-70%; Greco and/or Grechetto and/or Vermentino bianco and/or Malvasia del Chianti, up to 45%; Chardonnay and/or Sauvignon, up to 30%; other local white varieties, up to 15%.
Type Vin Santo Secco or Amabile: local white vrieties, all subjected to light drying, 100%.
Type Vin Santo Occhio di Pernice: local red vrieties, all subjected to light drying, 100%.
Varietal types: the blend proportions are always the same, variety indicated in the type name, 85%; other similar varieties admitted under the DOC law, 15%.
