Varieties:
Vine variety requirements for this appellation's area change according to type.
Type Rosato: Sangiovese, 40-60%; Canaiolo Nero, 10-30%; other local non-aromatic red varieties, up to 30%.
Type Vin Santo: Sangiovese, 85%; other local non-aromatic red varieties, up to 15%.
Type Vin Santo Occhio di Pernice: Sangiovese and/or Malvasia nera, 80%; other local non-aromatic red varieties, up to 20%.
Varietal types: the blend proportions are always the same, variety indicated in the type name, 85%; other similar varieties admitted under the DOC law, 15%.
