Vine variety requirements for this appellation's area change according to type.
Types Rosso and Vin Santo Occhio di Pernice: Sangiovese, 50-75%; Canaiolo nero, 5-15%; Ciliegiolo and/or Colorino and/or Malvasia nera and/or Syrah and/or Cabernet franc and/or Cabernet Sauvignon and/or Merlot, 10-15%; other local varieties, up to 20%.
Types Bianco and Vin Santo Secco or Amabile: Trebbiano toscano, 40-60%; Semillon and/or Pinot grigio and/or Pinot bianco and/or Vermentino and/or Sauvignon and/or Roussane, 40-60%; other local white varieties, up to 20%.
