Type Bianco: Trebbiano toscano, 50%; Vermentino and/or Malvasia bianca and/or Malvasia bianca di Candia and/or Ansonica, up to 30%; other local white varieties, up to 30%. Type Vermentino: Vermentino, 90%; other local white varieties, up to 10%. Type Vin Santo Secco or Amabile: Trebbiano toscano and/or Malvasia, 70%; other local white varieties, up to 30%. Type Vin Santo Occhio di Pernice: Sangiovese, 50-70%; Malvasia nera, 10-50%; other local red varieties, up to 30%.
