Vine variety requirements for this appellation's area change according to type and geographical subdenomination.
Type Bianco: one or more local white varieties, 100%.
Type Rosso: one or more local red varieties, 100%.
Type Vin Santo Secco or Amabile: Trebbiano toscano and/or Malvasia bianca, 70%; other local white varieties, up to 30%.
Type Vin Santo Occio di Pernice: Sangiovese, 50-70%; Malvasia nera, 30-50%; other local red varieties, up to 20%.
Varietal types: the blend proportions are always the same, variety indicated in the type name, 85%; other similar varieties admitted under the DOC law, 15%.
