	Vine variety requirements for this appellation's area change according to type and geographical subdenomination. Type Vin Santo: Malvasia bianca and/or Grechetto bianco (locally known as Pulcinculo) and/or Trebbiano toscano, 70%; other local white varieties, up to 30%. Type Occhio di Pernice: Sangiovese (Prugnolo gentile), 50%; other local varieties, up to 50%.
