Caldaro or Lago di Caldaro (DOC)

n 1970, the Lago di Caldaro denomination became the first of the long series of Alto Adige DOC wines. It is a red wine of high quality produced in a delimited area that includes parts of the provinces of Trent and Bolzano. The zone has an extremely favorable microclimate, because of the effect of the lake. The wine is made from Schiava grapes, although the addition of Lagrein and Pinot Nero is permitted up to a maximum of 15 per cent. There are many subvarieties in the Schiava family. The most famous are the Gentile, Grigia and Grossa. The name is Italian, for in German the variety is known as Vernatsch. The variety has been known since the 13th century and the Italian name, according to a study written in the 14th century by Carlo Cipolla of Verona, was derived from the fact that the vinestalk was pruned short and that the shoots were tied to the canes of the previous vintage, a method known as "vigna schiava" or "slave vine."
