It goes extremely well with a wide variety of foods, which assures brisk demand on the world's major markets.
Aside from a citation in a document of the 16th century, the first certain reference to the Dolcetto variety is contained in the Instruzione, written by Count Nuvolone in the late 18th century. The count provided details about a wine known as "Dosset'' and about its production zone. There are various theories about the origins of Dolcetto but the most probable is that the variety originated in the Monferrato around the year 1000. The variety was soon to be found throughout the Monferrato as well as in part of western Liguria, the Oltrepò Pavese and parts of the territories of Piacenza and Milan.
