osso di Canosa is produced in the community of the same name situated in Bari province. Its label also often bears the ancient Latin name of the city, Canusium.The wine is derived primarily from Uva di Troia, Sangiovese and Montepulciano grapes. The first of the three varieties draws its name from Troia, a small community in Foggia province and it is employed in the principal Denominazione di Origine Controllata wines of the Bari and Foggia districts. It is also known as Uva della Marina, because it is cultivated with excellent results in several communes along the coast north of Bari.
Sangiovese originated in Tuscany and principally in the district of Chianti, where it is still widely diffused. It is a rather rustic variety that is quite vigorous and has an abundant and constant production. It is fairly widely cultivated in Apulia.
Montepulciano was introduced into Apulia early in the present century, first in the province of Foggia and then, in more limited fashion, in those of Brindisi and Lecce.
