Montasio PDO is a cooked hard cheese. It has a cylindrical shape with flat sides, with a smooth and elastic rind that darkens in color the longer it is matured.
This recipe, with Mature Montasio PDO Cheese, is typical of the Region of Friuli-Venezia Giulia.
Cut the pancetta into small cubes and brown them in a frying pan together with the finely sliced onion. Peel and chop the potatoes and add them to the pan with a pinch of salt and a little freshly ground black pepper. When the potatoes have softened, stir in the thickly chopped or grated Montasio PDO cheese. fry the “frico” on both sides until a golden crust has formed.
